I harvested 4 months ago. I used the Spanish method to preserve them (just salt and water). I bottled them just over a month ago, but they still have to mature in the bottle for another month or two.
I guess I didn't think through what I said before, lol. For some reason I didn't think the average size of a toddler worth of olives wasn't that much if you were planning on selling or giving them away.
Speaking of which, I also tried making my sauce again, but adding olives, red pepper and wine. It was still good, but too sweet. I think it was either the wine or the pepper's fault, though.
