We have a demonstration orchard with about 60-80 olive trees - various sizes and cultivars. Because you use them for table olives they have to picked by hand and believe me, 20kg is a lot to pick by hand if your only work force is whiny students labourers that are completely useless.
I harvested 4 months ago. I used the Spanish method to preserve them (just salt and water). I bottled them just over a month ago, but they still have to mature in the bottle for another month or two.
